Linux Kernel version (at least v2.36.x or new "stable version").
Java version (at least v6 update 24 or new "stable version").

I only can say that i have my server installed on Centos 5.5 64bit whit Java and MySQL default and i never had any problem.
My server is running 8 ~ 9 month ago and i never had crash or something wrong in my server.
I never had used Debian or ubuntu, but i can tell you that Centos is a very stable SO.

Ubuntu is fine, you can also install the desktop enviroment if you dont like the command line and connect with tightvnc (like teamviewer) and ftp.
P.S: If you do that you can also turn the desktop enviroment off when you are done working on it to spare the ram.
